THE BEE'S KNEES

Honey is a direct reflection of the area in which we make our gin. The bees take pollen and nectar from local flowers and turn it into something so much greater. Their honey is such an important part of our gin especially as it is sourced locally. Their honey makes for a great gin as well as one of our favourite cocktails.

Ingredients

50ml Silent Pool Gin or Albury Spirit of Summer

20ml Honey

20ml Fresh squeezed lemon juice

Method

In a shaker, stir the gin and honey until the honey has dissolved. Add the lemon juice and fill the shaker with ice. Shake until chilled and strain into a chilled cocktail coupe of martini glass. Garnish with a twist of lemon peel or a fine dusting of dried lavender.
